To answer your question about the gessoed boards . I bought some MDF and put 3 coats of gesso on it. I've never done this before so i watched aYouTube about how to do it? I really like working on a smooth surface . It lets me put the paint down thinly of thickly very easily. A bonus is it' not expensive to do!
